Dry-Rub Barbecue Side Ribs

Dry-Rub_Barbecue_Side_Ribs_003I like to make ribs in two styles when cooking for a crowd – some people like dry-rubbed ribs (my choice), and wider bones offer lots of real estate for the rub (and take a little longer to cook). Back ribs are a bit meatier, so I find they suit the gooey stickiness of a finger-licking BBQ sauce.

Ingredients:

  • 2 tbsp (30 mL) cumin seed
  • 2 tbsp (30 mL) coriander seed
  • 1/2 stick cinnamon
  • 1 tbsp (15 mL) dried oregano
  • 1/4 cup (60 mL) paprika (hot , sweet or smoked)
  • 2 tbsp (30 mL) salt
  • 1 tbsp freshly ground black pepper
  • 2 x racks 2 full racks pork side ribs (about 6 lbs/2.5 kg)

Directions:

  1. Preheat one side of grill on medium (or if oven-roasting, preheat oven to 325 F 160 C).
  2. In small pan, toast cumin and coriander seeds over medium heat until a fragrance is emitted, about 3 minutes. Grind cumin, coriander and cinnamon stick in a spice mill until fine. Combine all spices together.
  3. To prepare ribs, pull away membrane on underside of racks (this can be initially loosened with a fork, then pulled holding it with a paper towel if slippery). Rub spice rub over top and underside of ribs, rubbing in well with hands.
  4. Place ribs on side of grill without direct heat and cover (the convection current will cook the ribs, but they will not scorch, as they are not in contact with direct heat). Cook for 1 ½ to 2 ½ hours, until tender when pierced with a fork. If oven-roasting, place ribs on a foil-lined baking tray and bake for about 2 hours.
  5. Slice ribs and place on a platter to serve.

alabama slammerIt as been a while since I posted something about alcohol but I finally tried something new. The Alabama Slammer.

It a great shooter with a real Southern Kick. Small, But perfectly proportioned.

This is how you make it:

INGREDIENTS
- 1 measure of Southern Comfort
- 1 measure of amaretto
- 1 measure of sloe gin
- 1/2 teaspoon of lemon juice

Now pour the Southern Comfort, amaretto, and sloe gin over cracked ice in a mixing glass and stir. Strain into a shot glass and add the lemon juice. Cover with your hand and slam on the table.

All there is left to do is enjoy!

Potato Bacon Cakes

Potato_Bacon_Cakes_003A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don?t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

INGREDIENTS:
Potato Bacon Cakes
- 1 lb. of Yukon gold potatoes, quartered
- 4 x of bacon, chopped
- 3 x green onions, sliced thinly
- 1/2 cup grated cheddar cheese
- 1 x egg
- Salt and pepper

DIRECTIONS:
Potato Bacon Cakes
1. Steam potatoes until tender when pierced with a fork.
2. Fry bacon until crispy, strain off fat and set aside.
3. Smash steamed potatoes and add the bacon, onions, cheese and egg and season with salt and pepper. Let cool.
4. Form potato mixture into four patties. Put reserved bacon fat into a large skillet over medium-high heat. Add a touch more cooking oil if necessary. Fry potato cakes until golden and heated through.

Makes 6 servings, about 3 strips per serving.
Per serving with sauce: 342 calories, 7.1 g total fat (3.4 g saturated fat), 30 g protein, 39 g carbohydrate, 2 g fiber, 106 mg cholesterol, 544 mg sodium

INGREDIENTS:
Marinade
1 x egg
1/4 cup hoisin sauce
1 tsp dark sesame oil
1 1/2 pounds (680 g) boneless, skinless turkey breast, cut into strips (about 1 x 4 inches)

Coating
2/3 cup sweetened shredded coconut
2 tbsp sesame seeds
1/2 cup unseasoned dry bread crumbs
1/4 tbsp each salt, garlic powder and onion powder
1/8 tsp cayenne pepper

Sauce
1/2 cup plum sauce
1/3 cup unsweetened frozen pineapple juice concentrate, thawed
1 1/2 tsp each prepared yellow mustard and cornstarch
